Proximate Analysis and Determination of Ascorbic Acid Concentration of Selected Non Leafy Vegetables in Kaduna Metropolis

Abstract
This study focuses on the proximate analysis and determination of ascorbic acid concentration of selected non-leafy vegetables commonly consumed in Kaduna Metropolis. The vegetables examined were chosen based on their availability and frequency of consumption among residents. Standard analytical methods were used to determine moisture, ash, crude protein, crude fat, crude fiber, and carbohydrate content, while ascorbic acid concentration was evaluated using titrimetric methods. The results showed significant variations in the nutritional composition of the vegetables, with some exhibiting high moisture content and others containing notable levels of protein, fiber, and vitamin C. The findings highlight the nutritional importance of these vegetables in daily diets and reinforce their role in preventing micronutrient deficiencies and promoting overall health. This research provides useful baseline data for nutritionists, food scientists, health educators, and policymakers concerned with improving dietary practices and nutritional well-being in the region.
