Abstract
The vegetable oils were obtained from both supermarkets and local markets in Nigeria. The oils were evaluated for *acid value, **iodine value, **peroxide value, **saponification value, **free fatty acid (FFA), and **vitamin A content. Triplicate determinations of the mean were calculated, and the **least significant difference (LSD)* was determined at *P < 0.05*. The results showed that the *acid value* was high in all the vegetable oil samples, with *Favor vegetable oil* having the highest value (*10.30 mg/g) and **Consume vegetable oil* having the lowest value (*10.10 mg/g). The **peroxide values* were found to be within range for all the vegetable oils, with values such as *2.72 mg/g* for *Kings oil* and *2.14 mg/g* for *Soybean oil*, the latter being the lowest. The *iodine values* were also found to be low (*53.1 mg/g, **54.44 mg/g, and **54.2 mg/g) but still within the standard range. The **saponification values* were relatively low in all the vegetable oils, with the highest value of *126.8 KOH/g* recorded for *Kings oil* and the lowest value (*124.6 KOH/g) for **Laziz oil. The **free fatty acid (FFA)* contents were also low across all the samples, with the highest value (*7.37%) for **Mamador oil, which is still lower than the **CODEX* standard for FFA. The results further revealed that *vitamin A* was not detected in any of the samples; hence, all the samples were *not fortified with vitamin A* as claimed. The quality of the various oil samples indicates that *the standard has been compromised, especially among the most commonly consumed vegetable oils. Therefore, further **assessment by NAFDAC* is recommended to regulate food standards for vegetable oils and ensure consumer safety.
