Abstract
Date powder, derived from Phoenix dactylifera L., is a natural sweetener with high nutritional value, offering health benefits such as dietary fiber, essential minerals, and bioactive compounds. However, its utilization in the food industry is limited due to concerns regarding flavor enhancement, stability, and microbial safety. This study aimed to evaluate the quality characteristics of date powder fortified with ginger (Zingiber officinale), cloves (Syzygium aromaticum), and cinnamon (Cinnamomum verum) to enhance its functional, nutritional, and sensory properties. The samples were analyzed for proximate composition, mineral content, vitamin levels, microbial safety, and functional properties.The results indicated significant improvements in protein, fiber, mineral, and vitamin content with spice addition. The incorporation of cinnamon, in particular, enhanced the swelling capacity, water absorption, and oil absorption properties, making the spiced date powder more suitable for various food applications. Microbial analysis confirmed the product's safety, with acceptable bacterial and fungal counts. Sensory evaluation revealed increased consumer acceptability, particularly in samples with cinnamon and ginger. The findings suggest that spiced date powder can serve as a functional food ingredient, offering enhanced nutritional value and extended shelf life. Further research on large-scale production and consumer preferences is recommended to support its commercial application.
