Abstract
This project was done to extract and characterize bean oil according to their particle sizes. The experiment was carried out using scent bean seed. (Whose name is Ehuru in Igbo land). The oils were extracted by solvent extraction/leaching operation using n-hexane. Proximate analysis was carried out to obtain ash content, total oil content, protein content and carbohydrate content of the extracted oils. From observation, it was noticed that as the diameter of the sieve decreased, the quantity of oil obtained increased. In conclusion, the quantity of oil yield was 12.1grams for 1.18mm particle size, 10.7 for 2.0 mm particle size, and 9.4 grams for 4. 75mm particle size. This result indicates the effect of particle size on the oil yield when placed under the same operating conditions of temperature, volume of extracting solvent and time. It is hereby recommended that the government, investors, industrialists and other entrepreneurs can invest into the extraction of vegetable oil from these local seeds including the bean seed.
