Estimation of Protein Content in Chocolate

Abstract
This study estimated the protein content of chocolate. Dried seeds of cocoa were purchasedfrom the local market in Ekpoma. Esan West Local Government Area, Edo State. The cocoaseeds were fried, cooled, the shafts were removed and the cocoa seeds ground to powder usinga blender. The powdered cocoa was mixed with sugar and heated in a pan until it melted andthe molten cocoa (chocolate) was retrieved. The protein content was determined using standardprocedure. From the result, it is observed that the protein content of the chocolate is 12.55 +0.57%.
