Effect of Ethanol Extract of Red Seed (arachis Hypogea) Without Seed Coat on Dpph Radical Scavenging Activity and Ferric Reducing Antioxidant Potential

Abstract

This study accessed the effect of ethanol extract of red seed groundnut (Arachis hypogea) without seed coat on DPPH radical scavenging activity abd ferric antioxidant power assays. Ted seed groundnuts were purchased from Auchi market, Edo state. The seed coats of the seeds were removed before splitting the seeds into two portions which were fried and oven dried respectively. The processed seed were ground to paste and extracted with ethanol. The extract was used for the determination of antioxidant activity following the standard procedures. The result showed that the DPPH radical scavenging activity of the ethanol extract was in the range of 22.78 = 3.54% observed in oven dried seeds to 34.99= 2.23% observed in fried seeds. The FRAP activity ranged from 43.19= 4.94% observed in fried seeds to 68.84= 0.25% observed in oven dried seeds. Significant (p < 0.05) differences were observed in the DPPH radical scavenging activity and FRAP activity of the fried and oven dried seeds extract. This present study reveals that the ethanol extract or red seeds groundnut possessed differing mechanisms of antioxidant activity with the fried seeds having radical scavenging activity and the oven dried seeds having higher ferric ion reducing activity.
