Comparative Analysis of Fatty Acids Profiles in Ruminant Milk (goat and Cow Milk);a Case Study of Diggol, Dambatta Local Goverment

Abstract
This study aimed to compare the fatty acid profiles of goat and cow milk in Diggol Village, Dambatta Local Government, Kano State, Nigeria. The research focused on analyzing the saturated (SFAs), monounsaturated (MUFAs), and polyunsaturated fatty acids (PUFAs) in milk samples from Sokoto Red and Kano Brown goats, as well as Bunaji and Rahaji cattle breeds. Using gas chromatography, the fatty acid composition was evaluated, and statistical analyses were performed to assess differences between species and breeds.
Key findings revealed that cow milk had significantly higher levels of saturated fatty acids (palmitic and stearic acids), while goat milk contained greater proportions of beneficial unsaturated fatty acids (palmitoleic, oleic, and linoleic acids).
