Proximate Composition of African Oil Bean Seed as Affected by Heat Treatment

Abstract
The study determined the proximate composition of African oil bean seed (Pentaclethra macrophylla) as affected by heat treatment, Fresh African oil bean seeds were obtained from Orlu, Imo State, Nigeria and transported to the Department of Biochemistry, Ekpoma, and Edo State. The seeds were split into two groups. One group was processed raw into powdered form and the second fermented before processing into powdered form. The seed powder was used for further analysis. Analysis of the proximate composition of the African oil bean seeds was done using standard biochemical procedures. Results of the study revealed that the proximate composition of raw and heat-treated African oil beans (ugba) in various nutritional components, like moisture, ash, crude protein, fat, fiber, and carbohydrate which ranges from 5.58 ± 0.02% - 11.36 ± 0.01%; 2.95. ± 0.02% – 3.91. ± 0.02%; 7.79. ± 0.01% - 8.28 ± 0.01%, 64.69 ± 0.00% -38.19 ± 0.00%, 2.75 ± 0.01% - 7.34 ± 0.01% and 19.76± 0.01% – 30.92 ± 0.03% respectively.
