Microbiological Analysis of Pasteurized Milk and Yogurt Sold in Danbatta Local Government Area, Kano State, Nigeria

Abstract
The study assessed the microbiological quality of pasteurized milk and yogurt sold in the Danbatta Local Government Area, Kano State, Nigeria, driven by concerns over public health safety. A random sampling technique was employed to collect ten samples each of milk and yogurt from various retail outlets. Samples were strictly maintained under cold chain conditions and analyzed for Total Viable Count (TVC), Coliform Count, and Fungal Count using standard culture techniques on Nutrient Agar, MacConkey Agar, and Sabouraud Dextrose Agar, respectively. The results revealed significant variability in microbial loads. A substantial proportion of both milk and yogurt samples recorded TVC levels exceeding the maximum regulatory threshold of 10^4 CFU/ml, strongly indicating widespread post-pasteurization contamination (Akinnibosun & Omatsone, 2017). Furthermore, the detection of coliforms in several milk samples suggested a critical failure in hygiene, raising the potential for fecal contamination. Fungal growth, primarily observed in yogurt samples, was attributed to poor storage and temperature abuse at the retail level.
