Abstract

ABSTRACT The aim of this study is to develop and evaluate high-calorie drinks using selected fruits and vegetables (orange, cucumber, watermelon, sugarcane) sweetened with honey, specifically designed to aid in the rehydration and nutritional recovery of dehydrated patients. After extracting the juices from all the ingredients, pour the juices into a large mixing bowl or container. Stir well to combine the watermelon, orange, cucumber, and sugarcane juices thoroughly. Then add honey to the mixed juice and stir continuously until the honey is completely dissolved and adjust the sweetness level according to taste preference ensuring the drink is palatable for consumption. After mixing and stirring the extracted juice together, the high-calorie drink was pasteurized and then cooled, packaged and stored in a well-covered plastic container. Sample B (8.05 ± 0.68) scored the highest, indicating it had the most appealing flavor profile, likely due to an optimal blend of sweetness from sugarcane and refreshing notes from the other fruits and vegetables. Sample C (7.15 ± 0.93) scored the lowest, suggesting that the flavor balance was less pleasant, possibly due to an overpowering or insufficient contribution of one or more ingredients.
