Retention of Nutrient (selenium) During the Processing of Sorghum.

Abstract
This project work is aimed to determine the impact of soaking on selenium retention in sorghum. 100g of sorghum grains was subjected to soaking for several hours, the filtrate was gotten and then digested using anhydrous copper sulphate, potassium sulphate and conc sulphuric acid. The ‘’digest’’ was analyzed using Atomic Absorption Spectroscopy (AAS) to detect the amount of selenium content lost during the soaking process. For 2hrs 0.54% of Selenium Content was lost and 99.46% was retained. For 4hrs 1.235% of selenium content was lost and 98.765% was retained. For 8hrs 3.027% of selenium Content was lost and 96.973% was retained. For 16hrs 4.9% of Selenium content was lost and 95.1% was retained. For 24hrs 5.56% was lost and 94.44% of selenium content was retained.
