Microorganisms Isolated from Fermented African Oil Bean Seed Ugba

The study investigated the microorganisms isolated from fermented African oil bean seed Ugba. A total of five (5) samples of locally processed, packaged and sold African oil bean seed (ugba) were randomly purchased from different stalls in the markets and analyzed by standard microbiological methods to determine the colony forming units per gram of samples, colour of samples ranges from light brown to dark brown and texture of samples ranges from soft to hard textured. Eight bacterial species were isolated and five fungal species they include: Bacillus species, Enterobacter species, Micrococcus species, Staphylococcus species, Pseudomonas species, Lactobacillus species, Shigella species, Corynebacterium species. The fungal species include; Geotrichum candidum, Rhizopus nigricans, Mucor species, Aspergillus niger and Aspergillus flavus . Bacillus lichenformis has the highest percentage occurrence of 21.7%, followed by Bacillus subtilis with percentage occurrence of 13.0% and some other microorganism such as Micrococcus, specie Shigella species and Enterobacter specie etc has the least percentage occurrence of 4.34%, so it was observed that various bacteria and fungi were involved in fermentation of ugba production such as Bacillus subtilis and Aspergillus Niger. It was also observed that some bacteria were either sensitive or resistance of antibiotics.
