Effect of Modified Atmosphere Packaging on the Quality of Chicken Eggs

Abstract
This study investigates the effects of modified atmosphere packaging on the quality of chicken eggs. A total number of 52 (fifty two) fresh eggs were obtained for the study and were randomly allocated to four treatment. Each treatment contains 13 fresh eggs. Control(without packaging), treatment 2(ziplock bag), treatment 3(glass dessicator) and treatment 4(waxed plastic jar).At the end of 21days storage, three eggs were randomly selected from each treatments, weighed,and all external parameters (egg weight, egg width, egg length)and broke-out to determine internal qualities (yolk color, yolk width, yolk weight, yolk height, albumen width, albumen height, membrane weight) and Haugh value were determined. The results showed packaging materials did not significantly (P>0.05) influenced Egg weight, Egg length, Egg width,Yolk height, Yolk diameter, Albumen height, Egg shell and membrane weights.
