Determination of Nutrients and Antinutrients Content of Sprouted and Un Sprouted Millet Based Formulations

Abstract
This study investigated the nutrient and anti nutrient contents of millet based formulations subjected to sprouting and enriched with sesame seed. Sprouting is known to enhance the nutritional profile of grains by increasing the bioavailability of proximate such as carbohydrate,protein,fat,fiber,moisture and ash. Anti nutrients such as phytate, tannins and trypsin inhibitor levels decreased. Sesame seed further enhance the nutritional value of food formulations. The study involved the preparation of both sprouted and whole millet samples with varying proportion of sesame seed inclusion,followed by analysis of nutritional contents using AOAC method and anti nutrients content using different techniques. Results indicated that formulations with sprouted millet and higher sesame content exhibited significantly higher nutritional contents and lower anti nutritional contents compared to whole millet formulations. The study concludes that sprouted millet enriched with sesame seeds offers promising potential as a functional food with enhanced nutritional benefits, making it a viable solution for addressing malnutrition challenge in Northern Nigeria.
