Phytochemicals, Anti-Oxidant and Proximate Properties of Soursop Fruit Drink Fortified With Chia Seed Micheal Theresa Agbo

Abstract

ABSTRACT The qualitative phytochemical screening of soursop fruit drinks fortified with chia seed of different ratio samples reveals the presence of some bioactive secondary metabolites while some samples reveals the absence of bioactive secondary metabolites. The results of quantitative phytochemical screening of soursop fruit drink fortified with chia seed of different ratio (100:0, 75:25, 80:20, 90:10, 70:30 and 80:15). The total phenolic content ranged from 0.024±0.00 0.300±0.01mg/gGAE respectively. Tannin content ranged between 0.021±0.00 0.025±0.01mg/g, sample A had the highest value of 0.028±0.01mg/g while B, C, D, E and F had the value of 0.024±0.00, 0.025±0.01, 0.024+0.00, 0.021±0.00 and 0.021±0.00 respectively. Alkaloid content ranged between 0.43±0.02-0.83±0.01mg/gQE. The proximate analysis reveal that the moisture content ranged from 95.80±0.0196.34±0.01, the fat content ranged from 0.01±0.00-0.03±0.01, the ash content ranged from 0.23±0.01-0.34±0.01, the protein content ranged from 0.45±0.03-0.60±0.02, the crude fibre ranged from 0.08±0.00-0.19±0.01 and carbohydrate content ranged from 2.89±0.05-3.04±0.02. The use of soursop fortified with chia seed, the fruit drink enhance nutrition, health benefit and good living of the consumers by consuming natural fruit drinks like soursop and chia seed.
