Studies on Microbial Load, Moisture Content, Antinutritional Factors and Shelf Life of Fermented Parkia Biglobosa Seeds (iru) Fortified With Xylopia Aethiopica (grains of Selim)

Abstract
The African locust bean tree with the botanical name Parkia biglobosa is a perennial deciduous tree that is fairly distributed all over the natural grassland of Northern Nigeria. However, this study was conducted to study some microbial load, moisture content and antinutritional factors of fermented Parkia biglobosaseeds (iru) with spicy (grains of selim). The biochemical character of isolatesfrom fermented Parkia biglobosawith [Fortified with Grains of Selim] depicts thatall the organisms tested positive for galactose, urease, glucose, lactose and mannitol. The organism present were Bacillus subtilis, Escherichia coli and Staphylococcus aureus. The biochemical character of isolate from fermented Parkia biglobosa [Naturally fermented iru seed). All the organism tested positive for catalase, motility, citrate test, galactose and mannitol. The organisms present were Pseudomonas sp., and Bacillus subtilis. There was no significant difference observed in the anti-nutritional analysis for PRI when compared with the control. In the Proximate analysis for naturally fermented iru and iru fortified with Grains of selim, Protein, fat, moisture was high in NFI while fiber and carbohydrates were high in IFX. In conclusion, during the course of this research work, Parkia biglobosa and grains of selim spices might have antibacterial properties either singly or in combination, but the combination treatment appears to work synergistically to further the microbial load of the bacteria during the course of this research.
