Energy Level, Antinutrient and Phytochemical of Tetracarpidium Conophorum

Abstract
ABSTRACTWalnuts are rich in vitamins, minerals, antioxidants and phytochemicals needed for the health improvement. This study analyzed the phytochemical and antinutrient composition of cooked walnut shells to evaluate their nutritional and industrial potential. This analysis were carried out by standard method of analysis. The results showed significant levels of bioactive compounds such as phenols (116.228 ± 0.004mg/100g), alkaloids (96.650 ± 0.042 mg/100g), and flavonoids (71.565 ± 0.021mg/100g), which underscores the antioxidant and therapeutic potential of walnut shells. The analysis also revealed substantial concentrations of antinutrients, includingoxalates (115.295 ± 0.021 mg/100g) and phytates (50.420 ± 0.028 mg/100g), highlighting the need for processing to reduce their nutrient bioavailability. These findings affirm the viability of walnut shells as a substantial source of bioactivecompounds and suggest applications in nutraceutical, pharmaceutical, and industrial sectors, provided adequate processing is applied to mitigate antinutritional impacts.
