Determination of Microbiological Quality of Commonly Used Festin Tomato Paste in Sokoto Metropolis

Abstract
ABSTRACT This study investigated the bacteriological quality of Festin Sachet tomato sold within Sokoto metropolis to assess their safety for human consumption. Festin Sachet tomato Sample were collected from different retail outlets across various locations in the metropolis using standard sampling techniques. The samples were analyzed for total bacterial count, presence of pathogenic bacteria, and conformity to microbiological standards using standard microbiological methods. Results revealed the presence of bacterial species including Bacillus spp and Staphylococcus aureus. The total bacterial counts ranged from 2.1x103 cfu/g to 2.6x103 cfu/g. The bacterial loads in the samples exceeded the acceptable limits established by regulatory standards. The study indicates the need for improved manufacturing practices, better storage conditions, and stricter regulatory oversight to ensure the safety of sachet tomato for consumers. Regular monitoring and implementation of proper hygiene practices during production, transportation, and storage are recommended to minimize bacterial contamination and protect public health.
