Bacteriological Qualify Assessment of Palm Wine Produced in Obi Lga Benue State

Abstract
This study aimed to assess the bacteriological quality of palm wine produced and sold in Obi Local Government Area, Benue State, Nigeria. Palm wine, a widely consumed traditional alcoholic beverage, is known to be susceptible to microbial contamination due to improper handling, fermentation, and storage practices. A total of five palm wine samples were collected from different producers and vendors in the region, and microbiological analyses were conducted to determine the total bacterial count and identify the types of microorganism’s present. The results revealed the presence of various bacterial species, including Staphylococcus species, Lactobacillus species, Bacillus species, Serratia species, and Streptococcus species, with varying levels of contamination. The total bacterial count ranged from 1.0x10^4 to 2.0x10^4 cfu/ml, indicating significant microbial contamination in some samples. Pathogenic bacteria such as Staphylococcus aureus and Bacillus species were also identified, which may pose health risks to consumers. The findings underscore the need for improved hygiene practices, proper fermentation control, and monitoring of palm wine production to minimize microbial contamination and ensure consumer safety. This study contributes to the understanding of the bacteriological quality of palm wine in Obi Local Government Area and provides recommendations for enhancing food safety standards in the region.
