Extraction and Characterization of Coconut Oil Using Cold Press Method ( Coco's Nucifera)

Abstract
Coconut oil is extracted from the kernel of matured coconut harvested from the coconut palm and about 52% to 85% of coconut oil is made up of specific saturated fats, called medium-chain fatty acids (MCFAs) including capric acid, caprylic acid, and lauric acid. Coconut oil is a common edible oil in certain countries, and there is a controversy regarding its effects on lipid profiles and cardiovascular disease disk. The high content of superficial femoral artery (SFA) raised concern that it could lead to more artherogenic lipid profiles and thus have health professionals in the 1980s, recommended that coconut oil should not be used. This has changed however, as it was noted that countries with high intake of tropical oils had some of the lowest rates of cardiovascular.... heart disease, and recently, the use of coconut oil has been become more popular because of the potential cardiovascular benefits.
