Bacteriological Assessment of Semi Processed Edible Cow Skin (ponmo)

Abstract
This study aimed to identify bacteria associated with semi processed edible cow skin (ponmo) sold in Abubakar Gumi Central Market and Kasuwar Barci Market in Kaduna metropolis. A total of 60 samples (30 water soaked ponmo and 30 dried ponmo) were collected and analyzed for bacterial contamination. The study isolated and identified six bacterial species in both samples: Staphylococcus aureus, Pediococcus spp, Bacillus spp, Micrococcus spp, Leuconostoc spp, and Pseudomonas aeruginosa. The bacterial count ranged from 1.04 × 107 to 4.4 × 104 CFU/ml. Antibiotic susceptibility testing was performed using various antimicrobial agents including amoxicillin, ciprofloxacin, rocephin, zinnacef, gentamicin, ampiclox, levofloxacin, azithromycin, erythromycin, and pefloxacin. The results showed varying patterns of resistance and susceptibility among the isolated bacteria. The presence of these bacterial species indicates potential contamination during processing, handling, and storage of ponmo, highlighting the need for improved hygiene practices and proper food safety measures in the preparation and sale of cow skin in these markets.
