Proximate and Nutritional Analysis of Tumeric

Abstract
This study focused on the proximate, and nutritional analysis of turmeric. Proximate analysis of turmeric showed moisture, protein, fibre, fat content,ash and carbohydrate content of 9.01, 17.02, 7, 1.01, 11.50, and 55% respectively. The results showed that the rhizome powder contains appreciable and high qualities crude protein and carbohydrates of 17% and 55% respectively. The fat extract and ash of turmeric extract revealed the presence of phytate and oxalate. The Nutritional composition analysis (ppm) of turmeric rhizome indicates the presence of calcium (29.643), sodium(29.788), Iron (4.479),and also it contains some vitamins including Vitamin A ,Vitamin B9 and vitamin C .The presence of nutrients proves that turmeric powder can be used as food and medicinal supplement
