Abstract

ABSTRACT
The nutrient composition and processing of Rhynchophorus ferrugineus was carried out at Oba in Anambra State. Samples of Rhynchophorus ferrugineus were collected through careful harvesting techniques. The samples of Rhynchophorus ferrugineus were processed for human consumption through drying and cooking methods. A structured questionnaire was administered and sensory evaluation assessment was carried out on processed Rhynchophorus ferrugineus appearance, smell, taste, texture and general observation results were recorded using six scale hedonic assessment. The results showed that dried Rhynchophorus ferrugineus larvae 57.9% was preferred to cooked Rhynchophorus ferrugineus 42.1% preference at probability of
