Bacteriological Quality of Frozen Chicken

Abstract
The bacteriological quality of frozen chicken sold in Auchi, a city in Edo State, Nigeria, was investigated in this study. A total of 2 samples of frozen chicken were collected from 2 different sellers and analyzed for the presence of bacterial pathogens and spoilage organisms. The results showed that all the samples were contaminated with various bacteria, such as Escherichia coli, Staphylococcus aureus, Salmonella spp., Bacillus cereus, and Pseudomonas aeruginosa. The mean values of the total aerobic plate count, total coliform count, and psychrotrophic plate count were 6.3x10 CFU/g, 2.2x10 CFU/g respectively. These values exceeded the international standards for frozen poultry products. The study concluded that the frozen chicken sold, in Auchi posed a potential health risk to consumers and recommended proper hygiene practices and quality control measures for the sellers and processors of frozen chicken.
