The Evaluation of Chemical and Nutritional Composition of Annona Muricata (soursop Pulp)

This study evaluated the chemical and nutritional composition of Annona muricata (soursop pulp). using ( AOAC, 2015). proximate, phytochemical, vitamin, and mineral compositions of Annona muricata were investigated. The result of the study revealed the proximate composition as follows; moisture (13.7±0.06%), protein (2.17±0.04%), fat (1.92±0.02%), crude fiber (1.55±0.01%), ash content (2.12±0.02%), carbohydrate (78.46±0.11%), and energy value (339.8±0.09 kcal/100g). The phytochemical components include; alkaloids (0.02±0.01%), phenol (0.01±0.01%), tannins (0.03±0.01%), flavonoids (0.01±0.01%), and saponins (0.03±0.01%). The vitamin composition include; vitamin A (4.61±0.01 mg/100g), vitamin C (20.63±0.03 mg/100g), vitamin B1 (0.11±0.01 mg/100g), vitamin B2 (0.04±0.01 mg/100g), vitamin B3 (0.30±0.01 mg/100g), and vitamin E (1.71±0.03 mg/100g). The mineral composition include; calcium (55.18±0.03 mg/100g), magnesium (32.44±0.04 mg/100g), sodium (35.63±0.02 mg/100g), Zinc (5.67±0.01 mg/100g), iron (8.96±0.01 mg/100g), and potassium (158.73±0.03 mg/100g). The high values of vitamin A, C, and E revealed that the pulp of Annona muricata could be a source of antioxidant agent, while the amount of calcium and potassium present may help in regulating blood pressure, thereby making it a valuable ingredient in food production and pharmaceuticals.
