Fibre and Vitamin C Content of Water Leaf

Abstract
Vegetables have added great economic and nutritional value to Nigeria due to their significant
importance gained over two decades. One of these plants is waterleaf (Talinum triangulare)
has become crucial in the field of research for its culinary and medicinal benefits
and for providing essential nutrition such as vitamins and minerals as well as phytochemicals.
This study was focused on the determination of vitamin C and fiber content of waterleaf
(Talinum triangulare). The primary objectives of this study were to determine the waterleaf's
(Talinum triangulare) vitamin C and fiber content. The results of the analysis showed an
average of 12.85% fiber content and 13.00 mg/g of vitamin C. These results exceeded those
from earlier research that validated waterleaf as a dietary and therapeutic resource. Without a
doubt, waterleaf can be used in food and medicine since it is a strong source of fiber and vitamin
C.
