Abstract
This study aimed to isolate and identify fungi associated with the spoilage of guinea corn(sorghum bicolor) from five different markets in Chikun Local Government Area, Kaduna State, Nigeria.Guinea corn is a vital crop in the region, but post-harvest spoilage, primarily caused by fungal contamination, leads to significant losses in quality. Spoiled guinea corn samples were collected from five selected markets, and fungal isolation was carried out using Potato Dextrose Agar(PDA) and Sabouraud Dextrose Agar (SDA) Media, which are commonly used for cultivating fungi.The fungal isolate were identified based on their macroscopic and microscopic characteristics. A total of three (3) fungal species were identified, including Aspergillus spp, Penicillium spp, Fusarium spp. Among these, Aspergillus spp was the most predominant, followed by Penicillium species. These fungi were found to contribute to the discoloration, softening in the spoiled guinea corn. The study emphasizes the role of proper storage condition to reduce fungal contamination and post-harvest spoilage, suggesting that regular monitoring and the use of effective preservation methods can help mitigate losses. Additionally, the finding highlight the need for greater awareness of fungal contamination and it's impact on food safety and quality in the region.
