Investigation and Identification of Nutritive and Anti-Nutritive Properties of Pumpkin Leaf

Abstract
Proximate and some essential mineral analysis were carried out on the leaves of Pumpkin (Cucurbita maxima) grown in Kano, Nigeria. The result of proximate analysis showed that the leaves contain: Moisture-2.979%, ash- 7.958%, crude fibre-3.503%, crude protein-5.366%, Carbohydrates-5.996%, This shows that the Pumpkin leaves could be used as food to supplement these nutrients. The result of the mineral analysis revealed:Sodium 24mg/100g, Potassium 44.38mE/dL, Calcium 3.648umol/L and iron 8.524umol/L Phosphorus 43.83mg/dL. It was concluded that pumpkin leaves could be a good source of energy and proteins for human and animals and also a good source of potassium and iron for human.
