Extraction and Characterization of Sesame Seed Oil

Abstract
This study investigated the extraction and characterization of sesame seed oil using the Soxhlet method with n-hexane as a solvent. Physicochemical analysis revealed a saponification value of 190.74 mg KOH/g, iodine value of 95 gI₂/100g, acid value of 5.64 mg KOH/g, and peroxide value of 5 meq/kg, indicating good quality and stability. FTIR analysis confirmed the presence of triglycerides, unsaturated fatty acids, and bioactive compounds, highlighting the oil's nutritional and industrial potential. While the slightly alkaline pH (9.9) suggests the need for further refining, the findings demonstrate the oil’s versatility for applications in food and cosmetics. Recommendations include optimizing extraction methods, improving oxidative stability, and enhancing bioactive compound profiling for broader industrial and health applications.
