Isolation and Identification of Mold Associated With Rice Dumpling Dambum Shinkafa Sold Around Some Areas in Birnin Kebbi Kebbi State

Abstract
Dambu Shinkafa are in different parts of the world especially Northern part of Nigeria. Its
use is however limited by spoilage by microorganisms. This study was carried out to isolate,
identify, fungi species responsible for the spillage of Dambun Shinkafa in Birnin Kebbi. Four
areas were selected for sampled collection namely: Badriya, Bayan Kara, Taxaco and FMC
area all in Birnin Kebbi, Kebbi Sate. Four (4) Dambun Shinkafa samples were obtained in
each of the sites. A total of Sixteen (16) were collected and analysis was carried out. They
were homogenized and serial diluted to “thin-out” the microbial proportion. PDA (potato
dextrose agar) were used for the isolation and identification of fungi respectively. The
organisms were identified using standard morphological, culture method. Aspergillus niger,
Penicillium spp, Rhizopus stolonifer, Rhizopus oryzae, Aspergillus fumigates, Fusarium
salani and mucor spp were isolates and indented in both samples. The highest percentage of
occurrences were obtained in Mucor Spp (37%) while lowest were recorded Aspergillus
flavus (12.5%). The implication of this study is that the process and quality of locally
produced Dambu needs to be critically monitored to avoid transmission of infection to
consumers. It is also necessary that local producers should be enlightened about good
processing practice and the effect of proper-preservation process as this will ensure products
free of pathogenic microorganisms.
