Sensory Evaluation of Fermented Coconut and Unfermented Coconut

Abstract
Sensory evaluation plays a vital role in determining the consumer acceptability and quality of
fermented coconut products, which have gained popularity for their functional health benefits.
The fermentation process, involving microorganisms such as bacteria, yeasts, and molds,
significantly impacts sensory attributes like flavor, texture, appearance, and odor, all of which
influence market success. This study aimed to assess the sensory characteristics of fermented
coconut products and evaluate the impact of different fermentation processes on these attributes.
Fresh coconuts were dehusked, and both the water and meat were collected for fermentation over
a period of 48-72 hours. Sensory evaluations were conducted using hedonic and descriptive tests
with a panel of 10 trained students, who assessed attributes such as color, flavor, texture, and
odor using a 7-point hedonic scale. The results were analyzed statistically using ANOVA to
identify the significance of fermentation on sensory qualities. The findings revealed that
fermentation significantly altered all key sensory attributes, with p-values less than 0.05 for
consistency, texture, color, odor, and overall liking. These results emphasize the importance of
fermentation in enhancing the sensory appeal and consumer preference for coconut-based
products. Therefore, optimizing fermentation conditions is essential for improving product
consistency and marketability, aligning the final product with consumer expectations.
