Abstract
ABSTRACT
Mycotoxin are poisonous chemical found in food when certain fungi grow in it.
Chemical and physical parameters were investigated in rice and bean samples using
standard procedures. A total of 30 chemicals were found in the rice samples while 31
chemicals were found in bean samples. Compound identified include fatty
acids, aromatic Compounds, alkanes and elasticizer. This is a reflection of complex
nature of microbial metabolism during decay process. The presence of potentially
health risk chemicals highlights the importance of safe food handling and storage
practices to minimise health risks. Food is complex in nature and should be treated as
such to avoid posing health risk to consumers.
