Abstract
ABSTRACTThe objective of this study is to evaluate the food management practices of the hospitality establishments in Abakpa and Igoli Communities of Ogoja Local Government Area. food management practices in food service industries are concerned with purchasing and receiving, storing/issuing, production and services. The population for the study was (100) from 8 hospitality establishments in Ndok Junction, Abakpa and Igholi communities respectively The sample for the study was (50) respondents from hotels outfits. The findings reveal that the hospitality establishments in the study areas practice informal purchasing method, have stores that are convenient position, well ventilated with good lighting but with low level of hygiene. Then practice conventional and commissary cooking service system and practice table service most often. Based on the findings, it was recommended that care should be taken to ensure gooa hygiene practices in the stores where foods are kept. This will help to increase sustainability of the establishment.
