Energy Level, Antinutrient and Phytochemical of Tetracarpidium Canophorum

Abstract
ABSTRACTWalnuts are rich in vitamins, minerals, antioxidants and phytochemicals needed forthe health improvement. This study analyzed the phytochemical and antinutrientcomposition of cooked walnut shells to evaluate their nutritional and industrialpotential. This analysis were carried out by standard method of analysis. The resultsshowed significant levels of bioactive compounds such as phenols (116.228 ± 0.004mg/100g), alkaloids (96.650 ± 0.042 mg/100g), and flavonoids (71.565 ± 0.021mg/100g), which underscores the antioxidant and therapeutic potential of walnutshells. The analysis also revealed substantial concentrations of antinutrients, includingoxalates (115.295 ± 0.021 mg/100g) and phytates (50.420 ± 0.028 mg/100g),highlighting the need for processing to reduce their nutrient bioavailability. Thesefindings affirm the viability of walnut shells as a substantial source of bioactivecompounds and suggest applications in nutraceutical, pharmaceutical, and industrialsectors, provided adequate processing is applied to mitigate antinutritional impacts.
