Antibacterial Potential of Aqueous Extract of Ginger (zingiber Officinale) on Freshly Harvested Tomatoes

Abstract
The study aimed at investigating the antibacterial potentials of aqueos extracts of ginger on freshly harvested tomatoes. Crude method was used to obtained the aqueos extracts of ginger. The prepared extracts was then applied on freshly harvested tomatoes on daily basis to examine the shelf life. Results obtained from this research shows that untreated tomatoes got spoils completely after 6 days, where as treated tomatoes stayed for 19days before getting spoils.S.aureus, Bacillus badius and Bacillus species are the bacteria isolated from the spoilts tomatoes, with bacterial load of 9.4x104cfu/ml, 5.2x104 for the treated tomatoes, cfu/ml, 2.22x105 cfu/ml and 2.36x105 cfu/ml for untreated tomatoes. The sensitivity tests of the extracts shows that all the isolates are sensitive to the extracts at 100mg/ml.
