Abstract
ABSTRACT
This project presents the design and development of cassava peeling machine, aimed at enhancing efficiency, reducing labor requirements, and improving product quality. The machine components were locally available material and the machine uses abrasive peeling mechanism to remove cassava skin. The machine comprises of an abrasive cylindrical drum, abrasive rotating disc, electric motor, shaft, bearing, belt and pulley. Performance of the machine was evaluated based on five trials with 2000g of cassava tubers each. The cassava tubers with maximum length and diameter of 7.5 and 3.5 inches respectively must be cylindrical and without dimples. The disc rotates at 497rpm with an electric motor of 1hp and 1400rpm. The average peeling efficiency was 67% with minimal flesh loss.
