Evaluation of the Mineral and Nutritional Composition of Short Grain Rice

Abstract
ABSTRACTThis study aims to evaluate the mineral and nutritional composition of short grain rice, a staple food widely consumed in various parts of the world. Short grain rice is known for its distinct texture and flavor, but its nutritional profile remains less explored compared to long grain varieties. , the study examines the presence of micronutrients and vitamins that contribute to the overall health benefits of this rice variety.The proximate analysis shows low fat (1.180%), moderate protein (9.009%), and crude fiber (4.100%), with a high carbohydrate content (80.751%), making it a good energy source. The ash content (4.960%) indicates the presence of essential minerals like calcium, magnesium, and potassium, vital for bone health and electrolyte balance. The mineral analysis reveals beneficial concentrations of sodium (85.550 mg/kg), potassium (152.550 mg/kg), calcium (62.500 mg/kg), and magnesium (73.850 mg/kg), alongside trace elements such as copper, iron, manganese, selenium, and zinc, all within safe levels. Lead contamination was minimal (0.011 mg/kg). Overall, short-grain rice is a nutritious, energy-dense food that supports health when part of a balanced diet.
