Abstract
Palm oil is an edible vegetable oil produced from the mesocarp of the ripe palm fruit of the African oil palm tree Elaesis guineensis (Obahiagbon, 2012). It is commonly consumed in Nigeria and many other tropical regions as cooking oil in (Fresh and oxidized) forms (Cottrell, 1991; Ebong et al., 1999).
